Sri Lankan Murunga Curry
Today I bring you another wonderful vegetable to try out, one which is providing me with all the goodness to kick start my self care Sunday :) I am so keen to show you all that you don't need to fall prey to fad diets of chia seeds and juice cleanses to keep your body happy. You can enjoy a healthy life with your belly full!!!
Murunga curry is a deliciously mild and gently spiced creamy curry. Once cooked, the rigid skin of the drumsticks soften and you use your hands or a spoon to eat the soft sticky seeds inside. This is absolutely delicious with a vegetable fried rice or some idli.
Murunga or drumsticks (as they are also known due to their obvious shape) are packed full of vitamin C, calcium, antioxidants, helping to lower blood sugar levels, having anti inflammatory properties, helping to aid in digestion whilst also being believed to enhance sexual health - I mean its probably easier to list what it doesn't do!
This curry is one of the easiest to make, and will provide you with an exciting alternative to a vegan or vegetarian diet - yes there is more to life than kale!
10 half sticks / 5 full size sticks of murunga
1/2 sliced onion
1 sprig of curry leaves, broken
1/4 teaspoon fenugreek seeds
1/2 teaspoon of turmeric
1/2 teaspoon of mustard powder
1 heaped teaspoon of curry powder
1 cinnamon stick
1 small tomato, chopped
salt to taste (around 1/2 teaspoon)
1 cup of cold water
1 heaped teaspoon of coconut powder
Using a potato peeler or a small sharp knife, gently peel away the rough outer skin of the drumsticks
Place a pan on the hob with the heat off
Add in the murunga, onion, curry leaves, fenugreek seeds, turmeric, mustard powder, curry powder, cinnamon stick, chopped tomato and salt
Pour in a cup of cold water, just enough so the murunga is covered
Add in the coconut powder
Turn on the heat and cook for 5-7 minutes with the lid on, and until the murunga is soft
Voila - ready to eat!
